Updates from the owner:
I hope everyone is staying safe out there. I wanted to take a moment to update the community on what’s happening at Racalto’s over the next two weeks.
First, thank you for the warm welcome you’ve shown Christopher Lomax, our incoming dessert baker. Your kindness has meant so much! To make sure Chris—and all visually impaired guests—feel at home, we’re outfitting the entire restaurant with braille signage. Most of the cooking tools he’ll need have arrived, and his first official day is Tuesday! Chris’s desserts will be available on Valentine’s Day, so don’t forget to make your reservations!
Moving forward, Jay and I believe it’s important for our team to feel a sense of pride—not just in their work, but also in the space where they do it. After all, our biggest investment isn’t the building—it’s the incredible people who make Racalto’s what it is. Since we opened, our kitchen team has been working in a decades-old space, which we strongly feel is unacceptable. Our kitchen renovation is tentatively scheduled to start on Monday, February 17, and it will happen in three phases:
1. The Prep Kitchen – This is where all of our meals are prepped, and it also houses our dishwasher. The entire space will be redone—new dishwasher, tables, ceiling, wiring, lighting, plumbing and sinks, appliances, and most importantly, heat and cooling (it’s quite remarkable that this area never had heat or air conditioning). This is also where our air fryers will be installed. Because of this, Racalto’s will be closed for two days (Monday, February 17th & Tuesday, February 18th) during this phase.
2 The Cooking Area – This includes our stove, griddle, fryers, and grill, all of which will be replaced with new and modern technology to better help with the high volume of meals we prepare. A feature of the new stove will be a dedicated space to prepare our Halal meats for our Muslim friends and neighbors.
3 Kitchen Expansion – We’re moving our walk-in cooler to the back of the building and investing in a walk-in cooler/freezer combo. This will give our kitchen team more space and efficiency. Once everything is finished, customers will be able to see through from the front door to the back—it’s going to be a modern and exciting transformation!
Front of the House:
Jay and I are looking for a local upholsterer who can help add leather padding to the benches in the front. If you or someone you know has the skills, please reach out to the restaurant!
Also, Jay and I will be trained in QuickDraw this week You can expect installation within 2 weeks.
Outside:
The concrete for the banquet patio is tentatively scheduled for the second week in March with an expected completion date of April 3. Our banquet room is free of charge for the community – soon, you’ll have a nice patio to accompany your event.
We appreciate everyone’s patience as we continue working to transform this once-dilapidated building into the restaurant we know it can be.
Finally, we’re proud to be presenting a $500 donation to Fresh Start Church’s donation center this week to help community members in need of food and essentials.
